I also added a pinch of salt. Everything else I followed according to the recipe. The result was absolutely delicious, soft and moist inside! I wish I could post a picture. Could you please send me the scaled down version of this recipe, I have tried this recipe three times and first time had house full of smoke, second time turned of ok and third time it rose nicely, then fell when baking started. Tried this tonight and loved it! Had to make a few adjustments based on my circumstances. Took it out and mixed the dough with an electric mixer, let it rise for 1 hr.

I use arrowroot starch instead tapioca starch i dont have tapioca and almond flour made from almond meal from the milk instead millet flour. Hi Maria, It could have been the combination of arrowroot and almond meal, or just the almond meal I use fine ground almond flour. Yes I used the gluten free setting and added the yeast to the center of the dry ingredients in a shallow divot. I used brown rice flour instead of white rice and almond flour instead of millet flour, everything else was the same.

I am a bit confused about whether to proof the yeast first in the warm water OR add the yeast DRY in the little well made in the dry ingredient layer as the final step pre-bake. Hi Dave, You do not proof the yeast if you are using a bread machine. Add the warm water with the oil, egg whites, and vinegar to the pan in your gluten-free bread machine. Let it sit on top of the wet ingredients.

Just bought an Oster ExpressBake which has a gluten free bread option. I used this recipe, but forgot the salt. I was so bummed out when I realized it as it was half way through the cycle.
